Serves 3-4 1 head cauliflower 1 cup cheddar, shredded 1/4 cup parmesan, grated 3 tablespoons chives Salt & pepper
Bring a large pot of water to boil over medium heat. Trim cauliflower head and chop into small florets. Add florets to boiling water and cook for 6 minutes, until tender. Strain florets and pulse in a food processor with cheddar and parmesan. Top with chives and salt & pepper.
